Aside from the Doom sharware version, Dark Forces was the first FPS I ever played, I spent many a hour playing and replaying it. Jedi Knight was pretty good, the live action cut-scenes while on the cheesy side, were kind of a neat gimmick, outcast was great as well they really refined the force powers and lightsaber work. I never played academy, I think I had the demo, but never gave it a shot.

One of the things that I really liked were all the different environments. Being set in a universe where faster than light travel was an every day occurrence gave a good opportunity to design levels that were more than just creeping through corridors that were all pretty much the same.

Aren't we due for another Star Wars FPS? I remember dedicating entire LAN parties to light saber battles for several of these games....

It is really interesting. I remember Dark Forces just being absolutely awsome. That said, I remember when the original Jedi Knight came out, I was a bit pissed off about it because I felt it was a cop-out to make Katarn a Jedi. In the original game, he was basically a Han Solo clone without having to be Han Solo. Solo isn't a Jedi and I felt the were just kind of desperate to include a light-saber...

Still, I did play Outcast and it was another awesome game. I remember thinking that it was some of the best light-saber action in any game...

They're not making a FPS, but the new Force Unleashed game is 3rd person, more in the flavor of Jedi Academy.

Jedi Knight Dark Forces 2 was one of the best FPS games I ever played.

The levels were fucking massive and it really made you feel like you were in a huge galaxy.
