Maybe you should try something like what TIME does with their 10 Questions.

Basically, people submit questions they want to ask before the magazine is published, and the interviewer picks the ones they like most to ask.

I wonder if any potential interviewees would be willing to do a video interview?

Either way, please don't wait 2 weeks between each one - if possible. I'm sure the editing takes quite a bit of work.

I was thinking iChat and SnapZ. Never tried it, but it should work.
